Corn & Sausage Muffins

Breakfast has to be the most interesting meal of the day. It has to be filling and delicious otherwise the day tends to be dull. Well, I speak for those who enjoy eating.

So when Massi came calling and was busy pampering Little Miss Sood Singh and demanding “something nice” for breakfast, I made sausage and corn muffins.

Preheat the oven to 180°C and grease muffin cases with some butter.

Cook sausages and corn in a pan over medium heat. Do not add water and let the juices from the meat cook the corn. You can play around with the ingredients – mushrooms, onions, spinach, eggs, tomatoes.. It is never ending!

Then, cut the sausages into small bits and mix it with together with the corn, some torn basil leaves, flax seeds, salt and pepper. You may add a dash of olive oil and balsamic vinegar too!

Cut out circles from the bread slices and roll them with a rolling pin to flatten them out.

Make a small cut in each circle from the edge till the center. It is easier this way to place the bread in the muffin cups, otherwise you may end up tearing it from all sides.

Stuff the base of the bread cup with some cheese. Then add a tablespoon of the corn and sausage mix into it and flatten it out.

Ready to Bake

Sprinkle some corn and cheese on top, add a tomato slice and a bit of salt and pepper and may be a basil leaf!

Bake it for about 20 to 25 minutes.
