It’s Easter. Zoya’s all cranky because of her shots. Singh finally gave the 40-year-old cot for repairs. Mary is on a holiday. My mother came at 7 am and did my dishes while I slept through sunrise and beyond. For a change, last night there were no mosquitoes. And I am in a mood to bake.
So here is to Easter!
– 2 cups wheat flour (atta) – 1/2 cup cocoa powder OR 1 cup Bournvita / Chocolate Horlicks – 1 and a 1/2 cups sugar if you’ve used cocoa OR 3/4 cup sugar if you used Bournvita / Chocolate Horlicks – 3 tsp baking powder – 1/4 tsp salt – 1/2 cup curd – 2/3 cup unsalted butter – 2 eggs – 2 tbsp vanilla- Preheat oven to 200 degrees C
- Grease a baking dish with some of the butter and sprinkle some wheat flour on itcake pans or other sized baking dish
- Sift and mix the wheat flour, cocoa powder, baking powder and salt
- Whisk the eggs
- When frothy, add the butter, sugar and vanilla. Whisk till the sugar loses its graininess
- Add the curd
- Using a large spoon, add the dry flour mix and whisk till its all well blended
- Distribute this batter into the baking dish and bake for 20 – 25 minutes or until a spoon inserted into center comes out clean
- Let the cake cool before icing it
- For the icing, I recommend the #ThatsTheBestFrostingI’veEverHad icing

This is nice…i had tried a wheat banana dates cake ..eggless…people around me liked it…I personally felt it tasted like sweet sandpaper..i guess i was too full of it….this sounds nice though..will get back
