Just got back after eating this really amazing raw papaya pickle at my Mom’s! I ate it like it were a main course dish. And of course, I finished it all.
INGREDIENTS:
– A medium sized raw papaya – 1 tablespoon oil / ghee – 1 teaspoon of black mustard seeds – A bunch of curry leaves – 1 green chilly chopped – Juice of 1 lemon1. Grate the papaya.
2. Heat the oil and throw in the mustard seeds. When they begin to pop, add the green chillies and curry leaves. This will take a minute on a medium flame.
3. Now add the grated papaya and cook it on a slow flame for about 3 minutes. Then turn off the flame.
4. Add the lemon juice once the papaya has cooled. If you add the juice while it is still hot, it may turn bitter.
5. You may add red chilly powder in the end if you like it really spicy!
Raw papayas are a rich source of provitamin A carotenoids, vitamin B, C and fibre.
